Alternate Uncle Matt segments
I never realised that the the Uncle Matt segments, like the the Doc segments, wer re-filmed for the UK versions - is this so for the French ones too?

Yes, there are several sequences that are unique to the French episodes.

This is also true for Germany.

And then there were just LOTS of international segments.
